    Chicken Souvlaki

    4 cups cubed or shredded cooked chicken
    2 large cucumbers, peeled, seeded and cut into 1/2" cubes
    2 scallions, both white and light green parts, chopped
    8 pitted kalamata olives
    2 cups grape tomatoes, halved or 2 large ripe tomatoes, chopped

    1/2 Cup plain low fat yogurt
    1/2 cup pre-crumbled feta cheese
    Black pepper
    1/4 cup chopped fresh parsley or mint
    Wedges of pita bread for serving

    Place the chicken, cucumbers, scallions, olives and tomatoes in a large serving bowl. Stir to combine.
    Place the yogurt and feta cheese in a small bowl and whisk together or, if you want a creamier dressing, place them in a food processor or blender and puree until smooth, 30 seconds. Pour the yogurt dressing over the chicken mixture and stir just to coat.
    Sprinkle pepper and the parsley on top then serve with wedges of pita bread.

    LaNette's version
    2 chicken breasts cubed
    1 large cucumber peeled and cut into cubes
    2 scallions both white and green chopped
    15 black olive's cut into quarters
    1 1/2 medium tomatoes cubed
    1/4 cup parsley chopped

    1/2 cup lowfat plain yogurt
    1/2 cup crumbled feta cheese
    1 small clove garlic minced

    Pita bread cut, or folded in half, for serving
    Place the chicken, cucumbers, and tomatoesand olives in a large bowl
    Stir to combine. Chop the parsley and the scallions and put in small serving bowl. Mix the yogurt, feta cheese and garlic to make a dressing.
    Serve in 1/2 of a pita bread topping with the parsley and scallions to taste and as much dressing as you like. Makes a wonderful sandwich! Enjoy!!
