    Fruit & Cheese Dip

    2 (8 oz.) bars cream cheese, softened
    1 can (1 lb.) fruit cocktail, drained
    1 can (20 oz.) crushed pineapple, undrained
    1 small box instant vanilla (or French vanilla) pudding (dry)
    Chopped peanuts for topping, if desired


    Soften cream cheese: beat in (with electric mixer) the fruit cocktail, pineapple, and vanilla pudding. Make sure all is well blended, and that the fruit cocktail is chopped smaller.

    Top with chopped peanuts to serve. Serve with crackers.

    You can leave the fruit cocktail undrained for a 'runnier' dip, or you can drain both the fruit cocktail and the pineapple for a more solid 'spread' rather than a dip.

    Lasts at least a week in refrigerator. This dip freezes well, so you can use part of the dip and freeze the rest for later use.
