    CASSOULET

    6 slices bacon, chopped
2 pounds boneless pork roast, cut into cubes
    1 medium onion, chopped
1/2 tsp each salt and pepper
    1/2 tsp Italian seasoning
8 oz kielbasa sausage, cut into coins
    1/4 cup red wine
14.5 oz can diced tomatoes with garlic and onion, drained
2 cans 15 oz each butter beans, drained and rinsed

Heat a heavy pot or Dutch oven. Add bacon and cook until browned and crispy. Add pork and next 4 ingredients to pot, cooking until pork is no longer pink. Stir in kielbasa and cook 2 min. more. Increase heat and add wine. Simmer 4 min. Stir in tomatoes and continue to simmer 3 min. Stir in beans, heat through. Serve warm. MAKES 8 SERVINGS OF CASSOULET.*
