    Hi...
    We just got done eating this for dinner...wow!! This is soooo good and nice to have a meatless meal every once in a while! I even served it with spinach salad, so my hubby and I will be as strong as Popeye!!!

    Cheese Spinach Pie

    Makes: 6 servings

    Ingredients:
    1 package (10 ounces) frozen, chopped spinach, thawed and squeezed dry
    1 carton (16 ounces) small-curd cottage cheese
    3 eggs
    4 tablespoons butter, melted
    1 cup sharp cheddar cheese cubes (1/2-inch pieces)
    3 tablespoons flour
    1 teaspoon salt (or to taste)

    Preparation:
    Preheat oven to 325 degrees.
    In large bowl, combine all ingredients and mix well. Turn into a buttered
    10-inch pie plate. Bake in preheated oven 1 hour and 15 minutes or until set and
    edges are golden.
