    Hi...
    We had this for dinner last night and it was great! I made my own Thai peanut sauce (I had the ingredients on hand and the bottle in the store was pricey!)

    Fast and Fabulous Thai Chicken Salad


    Ingredients


    1 package (16 ounces) coleslaw mix
    1/3 cup sesame ginger salad dressing
    2 cups cubed cooked chicken
    1/2 cup Thai peanut sauce
    1 medium sweet red pepper, julienned
    1/2 cup chow mein noodles
    2 green onions, chopped


    Directions


    In a large bowl, combine coleslaw mix and salad dressing. Transfer to
    a serving platter. Combine chicken and peanut sauce; place over
    coleslaw mixture. Top with red pepper, noodles and onions. Serve
    immediately. Yield: 6 servings.
    Nutrition Facts:
    1-2/3 cups equals 230 calories, 12 g fat (3 g saturated fat), 42 mg cholesterol, 588 mg sodium, 13 g carbohydrate, 3 g fiber, 17 g protein. Diabetic Exchanges: 2 lean meat, 1 vegetable, 1 fat, 1/2 starch.

    PEG'S NOTE: The bottle of Thai peanut sauce is a little pricey...so I made my own (just because I had all the ingredients on hand)...it was quick and easy to make up and really good...Here is the recipe for that:

    Thai Peanutty Dipping Sauce
    8 ServingsReady In Time 5 minutes
    Ingredients


    1/2 cup Jif® Creamy Peanut Butter
    1/2 cup lite soy sauce
    1/4 cup water
    5 tbsps. dark brown sugar
    1 tbsp. toasted sesame oil
    1 tbsp. hoisin sauce
    1/4 tsp. minced garlic
    1/4 tsp. minced fresh ginger

    Directions


    Combine all ingredients in medium bowl with a whisk until thoroughly combined.
    Yield: About 1 cup.
    TIP May be heated in microwave, covered, 45 to 50 seconds, if desired. Great as a dipping sauce for chicken or pork.
