    Hi...

    My mall buddy, Barbara, gave me this recipe and it is delicious! It is good as a great dinner or lunch served with some fresh fruit or with a nice green salad.

    Vidalia Onion Tart (Pie)



    1 deep dish pie crust

    2 cups Vidalia onions, thinly sliced

    1 TBSP olive oil

    Salt and pepper to taste

    Basil, to taste

    2 cups grated Mexican-style-4-cheese blend

    1 cup grated Monterey Jack cheese (with or without hot peppers)

    1 or 2 tomatoes, halved lengthwise and sliced

    Italian-style bread crumbs

    2 TBSP melted butter or margarine



    Place pie crust in a 9 inch glass pie pan. Prick bottom and sides with fork and bake as directed for 5 minutes. Cool.

    Lightly saute onions in olive oil for 2 to 3 minutes; salt, pepper and add basil as desired.

    Place onions in bottom of crust, top with cheeses; place tomatoes on top of cheeses.

    Lightly sprinkle bread crumbs and drizzle with melted butter. Bake at 400 for 20 minutes.

    Allow to cool before slicing and serving.
