Herb Chicken with Warm Vinaigrette (TNT)

Hi--
This meal was excellent!! I would have it again and again!! It would be a great meal for the summer or when you need a quick gourmet type meal!

HERB CHICKEN WITH WARM VINAIGRETTE

4 boneless skinless chicken breast halves
4 tbs white or dark balsamic vinegar
2 tsp dried Italian herb seasoning
1 tsp salt
1/2 tsp black pepper
3 tbs olive oil
1 pound Italian style plum tomatoes, seeded and chopped
Mixed Greens

Brush chicken with 1 tbs vinegar. Sprinkle with Italian seasoning, 3/4 tsp salt and 1/4 tsp pepper. Heat 1 tbs oil in skillet. Add chicken to hot oil, saute 7 min. per side or until browned. Remove chicken to platter, keep warm.

Add remaining vinegar to skillet, stirring to loosen any browned bits from bottom of skillet. Add remaining oil, salt and pepper to skillet. Stir in tomatoes, heat through. Pour warm vinaigrette over chicken. Serve with mixed greens.
