    These are sooooooo good...kind of like potato pancakes, except using carrots. They have a really good texture and flavor.

    Carrot Patties
    3 large carrots, grated (about 2 cups)
    1 onion, finely chopped (optional)
    2 eggs, lightly beaten
    1/4 cup bread crumbs
    1/4 cup flour
    1/2 tsp salt
    1/2 tsp black pepper
    canola oil

    Step One:
    Grate the carrots (older and careful preschoolers can help with this
    step) and combine with the onions (if using) eggs, bread crumbs,
    flour, salt and pepper.
    Step Two:
    Heat about 2 Tbsp oil in a large non-stick pan over medium high
    heat. Drop scant quarter cups of the carrot mixture into the pan and
    press down with spatula or fork. Cook for about 2-3 minutes or until
    golden brown. Flip patties and cook an additional 2-3 minutes.
    Transfer to a plate covered with a paper towel.
