    Hi...

    This is another great "comfort food" recipe, but with a twist! It is like a chicken pot pie but instead of a regular flour crust, you make the crust from mashed sweet potatoes. It is wonderful!!

    CHICKEN PIE with SWEET POTATO CRUST

    3 cups diced cooked chicken
    1 cup sliced cooked carrots
    6 small white onions, quartered and cooked
    3 Tbsp. flour
    1 cup milk
    1 cup chicken broth
    salt and pepper to taste

    Layer chicken, carrots and onions in a greased 2-1/2 quart
    casserole. In a small saucepan, over medium heat, blend 3 Tbsp. flour with a small amount of the 1 cup milk until smooth. Slowly add rest of milk and the chicken broth; cook until thickened... add salt and pepper to taste. Pour over chicken and vegetables.
    Cover with Sweet Potato Crust. Bake at 350 for about 45 minutes.

    Makes 6 to 8
    servings.

    SWEET POTATO CRUST:
    2 cups flour
    1 tsp. baking powder
    1/2 tsp. salt
    1/3 cup shortening
    1 cup mashed sweet potatoes
    1 egg, well beaten

    Combine flour, baking powder and salt. Cut in shortening until
    resembles coarse cornmeal. Add mashed sweet potatoes and egg; blend well. Roll dough on lightly-floured board to about 1/4-inch thickness. Place over vegetables and chicken in casserole.

    Yield: crust for 1 pie.
