Red Bliss Potato Salad (TNT)

Hi....

This potato salad was really yummy. I used about 12-15 (1 bag) of little red potatoes, quartered. I also added a little mayo right beforre I was ready to serve it because it was a little stiff.

Red Bliss Potato Salad


12 new potatoes, diced
1/4 cup green Onion, chopped
1 tablespoon Dijon Mustard
4 eggs
1/2 cup Sour Cream
1 Tablespoon Lemon Juice

Cook potatoes for 12 minutes in boiling water or until tender. Drain. At the same time, hard boil the eggs in a small pan for10 minutes. Peel and chop. Combine Sour Cream, mustard and lemon juice in a small bowl. Combine everything in a large bowl. Chill if desired.

** Cooked ham can be added when you combine everything together.

PEG’S NOTES:

I used little red potatoes, quartered

I also added a little mayo at the end (or you could use more sour cream), just to make the right consistency.
