We really enjoyed this recipe..it makes a tuna salad sandwich a little fancier! I also chopped up some dried cranberries and added it to the mix....YUM! It makes a really quick dinner when you are in a hurry...just make up the tuna salad earlier in the day...then all you have to do is toast the English muffin, add the tuna salad and you're ready to eat!
I just finished up the rest of it for lunch.
    Enjoy!

1-6 1/2 oz can tuna, drained
    6 green olives, chopped
    2 hardboiled eggs, chopped
    1/4 c mayonnaise
    1 celery stalk, chopped fine
    1/8 c pecan pieces

Slice English muffins lengthwise; toast, then butter. Mix all ingredients and put between the muffins. Serves 6.
