    Hi....

    We had this for dinner a few nights ago and it was really good! So tasty. I used brown rice instead of white rice. We are having leftovers tonight!

    Mexican Rice and Black Bean Casserole



    1 pound bulk pork sausage

    2 cans Mexican style stewed tomatoes, undrained, 14.5 oz. each

    2 cups cooked white rice

    1 can black beans, rinsed and drained, 15 oz

    1 medium green sweet pepper, coarsely chopped

    1/2 cup shredded cheddar cheese, 2 oz

    Light sour cream, optional



    Preheat oven to 350. In skillet, cook sausage until cooked through, breaking up sausage as it cooks; drain off fat.Stir undrained tomatoes, cooked rice, beans and sweet pepper into sausage. Spoon into a 3 quart rectangular baking dish. Cover with foil. Bake for 40 to 45 minutes or until heated through. Remove from oven and sprinkle with cheese. Let stand for 5 minutes before serving. If desired, serve with sour cream. Makes 8 servings.
