    Hi....
    I didn't know what pork goujons were, so I decided to try this recipe because it sounded really good....and it is really good! I looked up goujons---it is of French origin and it means small strips of fish or meat that are coated with bread crumbs or flour and deep fried.
    Well, I didn't deep fry the pork strips, I just browned them good in the oil---worked great. The apple slaw on the sandwich really added that special pizazz!

    Pork Goujons with Apple Slaw

    Recipe for pork goujons with a yogurt and wholegrain mustard sauce

    Ingredients
    500g pork strips (often sold as stir-fry pork)---about 1 pound
    1 cup all purpose flour
    1tsp salt
    1tsp paprika
    Oil for frying
    1/4 of a large cabbage (about 2 cups), shredded (I used red cabbage)
    2 large carrots, shredded
    2 granny smith apples, shredded
    3/4 cup mayonnaise
    2TBSP plain yoghurt
    1 tsp wholegrain mustard
    1tsp honey
    1TBSP lemon juice
    Bread rolls or Tortilla wraps, to serve
    hot sauce, to serve (optional)

    Directions
    Coat the pork strips in the flour, salt and paprika.

    Heat the oil and fry the pork until crispy and cooked through. Set
    aside.

    Combine the shredded vegetables and apples with the mayo, yogurt, mustard, honey and lemon juice. Season to taste.

    Half the bread rolls and toast them on the cut side (optional).
    Place a few spoonfuls of the apple slaw on one half of the bread
    roll followed by a few pork goujons and lastly some hot sauce.

    PEG'S NOTE: ....I didn't deep fry the pork strips, I just browned them good in a skillet with some oil.
