Firehouse Chili-Pasta Bake (TNT)

Post by pstarkoski on Thu Jan 08, 2009 4:50 am

I have such a sweet hubby...he wanted to made dinner for us tonight.
Well, when I saw this recipe I knew this would be the one for him to make...he is a retired batalion chief from our town's fire department..Well, let me tell you we thoroughly enjoyed it!! It is so good...I love anything like chili and anything that has kidney beans in it. I had some leftover pepper jack cheese from another recipe, so he used half that and also regular Monterey Jack cheese...
It was delicious. I am sure this would be a hit at a potluck dinner at church too!!

3 cups (8 oz.) ziti, uncooked
1/2 lb. lean ground beef
1 cup diced green pepper
1/2 cup chopped onion
2 cloves garlic, finely chopped
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can (about 14 oz.) dark red kidney beans, drained
1 can (about 14 oz.) chunky style tomatoes
1&1/3 cups (12 oz.) medium salsa
2 cups (8 oz.) shredded Monterey jack or Cheddar cheese, or a mix of both
Heat oven to 375°F.

Cook pasta according to package directions; drain.

Meanwhile, in large skillet over medium heat, cook meat, green pepper, onion, garlic, chili powder, salt and pepper 10 minutes or until vegetables are tender and meat is thoroughly cooked, stirring occasionally.

Stir in kidney beans, tomatoes and salsa; heat to boiling.
Reduce heat; simmer 10 minutes.

In 13x9x2 inch baking dish, stir together pasta and sauce until well blended; sprinkle with cheese.

Bake 10 minutes or until cheese melts.

Serves 10 (1 cup each) (?)
