    Hi,
    We had this a few nights ago...even though it's summer in south florida! I still like my soups.
    This was a really good thick soup. I served with a salad and some crusty bread! Yum!

    PORTUGUESE BEAN SOUP
    Makes 8 servings.

    1 tsp salt
    2 tbs honey
    Two 15 oz cans Great Northern beans
    1/4 cup tomato paste
    1 onion, diced
    8 oz sliced bacon, diced
    1 bay leaf
    1 tbs paprika
    28 oz can diced tomatoes
    2 medium potatoes, cut into pieces
    4 garlic cloves, thinly sliced
    8 oz chorizo, cured spicy pork sausage, or kielbasa, cut into coins

    COOK bacon in a pot until crisp. Remove, set aside. Discard all but 1 tbs bacon fat and add sausage, cook until browned. Remove sausage, reserve. Discard all but 1 tbs fat and add onion and garlic and cook until soft.
    STIR in tomato paste. Add potatoes, beans, 4 cups water, tomatoes, honey, paprika, salt, bay leaf and reserved sausage and bring to a boil. Reduce heat, simmer 30 min. Remove bay leaf and SERVE soup with bacon on top
