Another great chicken recipe....this would make a great summer salad dinner.

Creamy Dijon Chicken Salad
Ingredients
1/4 cup Light Sour Cream
2 tbsp Grey Poupon Dijon mustard
2 tsp each red wine vinegar, poppy seeds
3 cups cooked chicken breast strips (about 1 lb.)
6 cups torn salad greens
1 cup halved cherry tomatoes
2 green onions, diagonally sliced
1/4 cup sliced almonds, toasted
Directions
Mix sour cream, mustard, vinegar and poppy seed in medium bowl with wire whisk until well blended; cover. Refrigerate at least 1 hour to allow flavors to blend. Add chicken; toss to coat. Place 1-1/2 cups of salad greens and 1/4 cup of tomatoes on each of 4 salad plates; top evenly with chicken salad. Sprinkle with onions and almonds.
