1/2 lb. regular pork sausage (bulk, or take out of casing)
1/2 lb. hot pork sausage (bulk, or take out of casing)
1-1/2 cups brown rice, uncooked
2 cups sliced carrots
1 cup chopped celery
1 medium onion, chopped
1/2 cup chopped green pepper
1 can (14-oz.) chicken broth
1/4 cup water
1 TBSP soy sauce
Preheat oven to 375. Scramble and cook sausage; drain. Cook rice in water according to package directions until 1/2 done; drain. Spread rice evenly over bottom of a 3 quart casserole dish. Spoon vegetables evenly over rice. Mix together chicken broth, soy sauce and water and pour over all. top with sausage. Cover with foil and bake for 40 minutes. Remove foil, stir well to mix ingredients. Add salt and pepper, if desired. Bake uncovered 30 minutes more or until rice is tender.
Serves: 6-8 servings.
