    The horseradish really adds a little extra "zing" to it!
    I will be making this one again when I make meatloaf again!

    Horseradish Meat Loaf
    Horseradish in he meat mixture and the saucy topping creates a
    pleasantly pungent flavor throughout this meat loaf.


    ~~~Meat Loaf~~~
    2 lb. ground beef
    3/4 cups uncooked regular oatmeal
    1 large onion, chopped
    1/2 cup ketchup
    1/4 cup milk
    2 large eggs, lightly beaten
    1 TB prepared horseradish
    1-1/2 tsp. salt
    1/2 tsp. ground black pepper

    Combine first 9 ingredients in a large bowl; stir well. Form beef mixture into a loaf,
    and place in a 9" x 5" loaf pan.

    ~~~Ketchup Topping~~~
    1/2 cup ketchup
    3 TB brown sugar
    1 TB prepared horseradish
    2 TB spicy brown mustard


    Combine 1/2 cup ketchup, brown sugar, 1 tablespoon horseradish, and mustard
    in a small bowl, stirring well. Spoon half of ketchup mixture over meat loaf.

    Bake meat loaf, uncovered, at 375° F., for 1 hour and 15 minutes.

    Spoon remaining ketchup Topping over meat loaf, and bake 10 more minutes.

    Remove to a serving platter.

    Yield: 8 servings.
