Sausage and Orzo (TNT) Empty Sausage and Orzo (TNT)

    Hi....
I served this when our boys came over for their Thursday weekly dinner with "the parents"! They both really love Kielbasa, but aren't too keen on zucchini, so I substituted fresh broccoli and some fresh asparagus instead. I also used chicken broth instead of the beef broth. It was a hit! I maybe should have doubled the recipe!!
    enjoy!

    Sausage and Orzo
    Makes: 4 servings
    Start to Finish: 16 mins

    2 -inch chunks
    1 tablespoon cooking oil
    1 cup dried orzo (rosamarina)
    1 14 ounce can low-sodium beef broth
    1 teaspoon dried Italian seasoning
2 medium zucchini, halved lengthwise, coarsely chopped (2-1/2 cups)
1/3 cup1-inch slices green onions and chopped red sweet pepper
    Directions
In large skillet over medium-high heat, brown sausage in hot oil 2 minutes; stir in orzo. Cook and stir 1 minute. Stir in broth, 1/2 cup water, and seasoning. Bring to boiling; reduce heat. PEG’S NOTE: Instead of using the zucchini, I used some fresh broccoli and asparagus and I also used chicken broth instead of beef broth.
