    Here is another oldie but goodie!! 'This recipe came from my neighbor many years ago...they have moved, but are still in the area and I see Judy every once in a while..This is a great recipe. You can make it up ahead of time and then just heat it up when you are ready to eat. It's great the next day too...if there is any left!

    Chinese New Year's Rice

    3 TBSP oil
    1 lb. boneless chicken breasts, cut into bite-size pieces
    3-1/2 cups chilled, cooked rice
    3 green onions, sliced
    1 stalk celery, sliced
    1 carrot, shredded
    1 to 2 TBSP soy sauce
    pepper, to taste
    Heat oil in large skillet over medium heat; add chicken. Cook and stir until lightly browned. Add remaining ingredients. Cook and stir until heated through.
    Serves: 6
