    INDIAN SPICED CHICKEN, PEPPERS, AND PEACHES

    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp salt
    4 tsp canola oil
    3 tsp grated fresh ginger
    4 boneless, skinless chicken cutlets
    2 tbs lime juice
    2 peaches, peeled and cut into thin wedges
    1 sweet potato, quartered lengthwise and cut into quarter moons
    1 sweet red bell pepper, thinly sliced
    6 scallions, cut into 1 inch pieces

    Heat outdoor grill. Using 12 inch wide foil, cut 4 pieces 32 inches long, fold each piece in half to make a rectangle. Coat foil pieces with cooking spray. In bowl, stir together first 5 ingredients. Rub half of this mixture over chicken, set aside. Stir lime juice into remaining mixture. Add peaches and next 3 ingredients, toss to coat.

    Place peach mixture on one half of each foil piece. Top each with seasoned chicken. CREATE A PACKET---Fold second half of foil over chicken and vegetables, seal sides and front edges, leaving space for steam to build. Place foil packets on grill rack, grill 25 min. Open packets, transfer contents to 4 serving plates.

    Packets can also be baked at 450° for 25 min. instead of grilled. Makes 4 servings.*
