2 lbs. fresh carrots, peeled and trimmed
3 tablespoons butter
2 large shallots, sliced
1 1/2 tsp. chopped fresh thyme
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup packed light brown sugar
3 tablespoons balsamic vinegar
Over high heat bring pot of water to boil. Add carrots; cook until
tender.. Drain;set aside.
In a large nonstick skillet melt butter over med-high heat. Add next
4 ingredients; cook until shallots are softened.
Stir in sugar and vinegar, stirring until sugar is melted. Reduce
heat to medium.
Add carrots; cook until heated through and glaze thickens, 6-8
