    Hi--
    I made this last week and it is wonderful! I used tilapia, but any
    kind of fish fillets would be fine. It is really good and crunchy!

    BAKED FISH FILLETS (WITH CHEESE)

    1/2 cup cornflake crumbs
    2 tbs cornmeal
    2 tbs grated Parmesan cheese
    1/2 tsp each salt and pepper
    1/8 tsp cayenne pepper
    2 egg whites
    3 fish fillets

    Heat oven to 450°. Grease a baking sheet. Mix together first 6 ingredients in shallow dish. Whisk egg whites in a second dish until frothy. Dip fillets in egg white, then in cornflake crumb mixture to coat. Place on baking sheet. Bake fillets 8 min. turn fillets over. Bake until crispy and baked through. Cut each fillet in half. MAKES 6 SERVINGS.*
