Cherry-Apple Salad (Cooking Light)
1-1/2 cups unsweetened applesauce
1 TBSP lemon juice
1 (0.3-oz.) package sugar-free cherry jello
1 (8-oz.) can unsweetened crushed pineapple, undrained
3/4 cup diet lemon-lime soda
lettuce leaves, optional
Combine applesauce and lemon juice in a saucepan; bring to a boil. Remove from heat; sdd gelatin, stirring until dissolved. Cool. Add pineapple and soda; spoon inot sic 1/2-cup molds. Chill until firm. Unmold on lettuce, if desired.
YIELD: 6 servings.
PER SERVING: 56 calories; 1.1 grams protein; 0.1 gram fat; 13.2 grams carbohydrate; 49.4 mg. sodium; and 126 mg. potassium.
