    Hi all--
    I have seen this recipe posted on several of my groups and I just had to try it! ...so I tried it this morning.
    It was really good....sounded strange, but then that's why I tried it!! It was very quick and easy. It would be great for those mornings when you are really rushed...it hardly takes any time. I used the ham and cheese. I didn't have any green peppers. I think it would be good with bacon and cheese too and maybe throw in a few mushrooms.
    You could make it Italian by adding pepperoni and Mozzarella cheese....Polish by using Polish sausage....the combinations are unlimited!!

    Omelet in a Mug
    Serve: 1 serving
    Prep. time: 5-10 minutes
    Difficulty: Easy
    Ingredients:
    2 egg, beaten
    2-3 TBSP shredded cheddar cheese
    1 TBSP diced cooked ham
    1 TBSP diced green pepper
    salt and pepper to taste
    Cooking Instructions:
    Combine all ingredients in a small bowl; mix well. Spray a microwave-saft mug with cooking spray. Pour in egg mixture. Microwave, uncovered, on HIGH for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.

    You can use any of your favorite omelet ingredients ... the ones listed are just suggestions
    When you microwave the second time, check after 1 minute. I found that 1-1/2 minutes might have been just a little too long in microwave (a little dry).
