Curried Meatloaf (Cooking Light)
1 lb. ground round
2.3 cup peeled, diced cooking apple
1/3 cup diced onion
1/3 cup quick-cooking oats, uncooked
1 TBSP prepared brown mustard
1 TBSP prepared horseradish
1/2 tsp. curry powder
1/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup skim milk
1 egg, beaten
Chopped fresh parsley (optional)
Combine all ingredients except parsley; mix well. Place in an 8-1/2x4-1/2x3-inch loafpan; bake at 350 for 1 hour and 10 minutes.
Remove meat loaf from pan immediately. Garnish with chopped parsley, if desired.
YIELD: 6 servings.
PER SERVING: 183 calories; 22.6 grams protein; 9.1 grams fat; 6.5 grams carbohydrate; 95 mg. cholesterol; 298 mg. sodium; and 354 mg. potassium.
