I made this recipe for a Christmas party and they were gone in a flash! They are really good!

Baja Bites
5 eggs, beaten
1 cup cottage cheese
1/4 cup flour
1/2 tsp. baking powder
1/4 cup butter, melted
2 Tbs. green onion, minced
4 oz. can green chiles, drained
2 cups shredded Monterey Jack cheese
Combine eggs and cottage cheese; blend until almost smooth. Add flour, baking powder and butter; stir in onion, chiles and cheese. Pour into a lightly greased 8x8 baking pan; bake at 350 for 30 to 40 minutes. Let cool slightly; cut into squares.
