Hi...
I made this for dinner last night and it was very good....it's quick and easy and you can use up leftover chicken (or I used ham). ..It makes a great summertime meal.
This is another keeper!

CONFETTI BEANS AND RICE WITH CHICKEN
1 bag Success Brown Rice
2 tsp Dijon mustard
1/2 cup light Caesar salad dressing
15 oz can black beans, rinsed
12 oz cooked diced chicken (or you could use ham)
11 oz can Mexican style corn, drained
4 green onions, thinly sliced
Spinach leaves
Prepare rice according to package directions. In a bowl, combine mustard and dressing. Toss in beans, rice, chicken, corn and onions. Chill or serve at room temp. Garnish with spinach leaves. MAKES 4 SERVINGS.*
