    Chicken Manicotti

    This recipe is from Amy Myers of Bloomingdale, Georgia, who writes "At least once a month I make this. A friend used to make it at her house all of the time for company. Kids and family love it."
    Ingredients:
    1 box manicotti noodles
    1 pound boneless chicken breast, finely chopped
    1 onion, finely chopped
    2 cans (10 oz. each) cream of mushroom soup
    2 cups grated cheddar cheese
    1 cup grated mozzarella cheese

    Directions:
    Cook manicotti according to package directions.

    Cook chicken and onion in a little oil, until the chicken is done. Put into a bowl.

    Add mushroom soup and 1 cup of the cheddar cheese to the chicken mixture and stir to combine. Reserve 1 cup or so of this mixture.

    Stuff the manicotti noodles with the remaining chicken mixture and arrange in a baking dish. Top with the reserved chicken mixture, then the remaining 1 cup of cheddar cheese and the mozzarella cheese.

    Bake at 350 degress F. for about 40 minutes until brown.
