HOT GERMAN RICE SALAD
6 slices bacon, cut into 1/4" pieces
1 small onion, chopped
1/2 cup cider vinegar
3 TBSP sugar
2 TBSP water
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. celery seed (optional)
1 small carrot, grated
2 TBSP fresh parsley, chopped
4 cups cooked rice
In a large skillet, cook bacon until crisp. Pour off fat; return 2 TBSP of dripping back to skillet. Add onions, vinegar, water, salt, pepper and celery seed. Cook until onions are tender. Stir in rice, carrots and parsley. Heat through, about 5 minutes. Sprinkle servings with bacon.
