Spatzle is served in many German homes at Christmastime. Ingredients: (Serves 4) 2 eggs 1 1/2 cups all-purpose flour 1/2 cup water 1/2 teaspoon salt 1/4 teaspoon baking powder pinch of grated nutmeg 1/4 cup plain or seasoned breadcrumbs 1/2 cup butter Directions: Beat the eggs. Combine them with the flour, water, salt, baking powder, and nutmeg. Mix well. Drop a few small bits of the batter from a spoon into simmering salted water. Let boil for 4 to 5 minutes. Remove with a slotted spoon. Cool briefly, then test the dumplings. They should be light in texture; if they are heavy, add several tablespoons of water to the batter and mix well. Repeat the cooking process until all the dough has been used, placing the finished dumplings in a bowl. Saute the breadcrumbs in butter. Top the dumplings with the buttered breadcrumbs. |
