Hi...
We are having this for dinner tonight. My hubby has to go teach at the college tonight and has to leave by 5, so I had to have something ready early...I had a little taste and it is really good. I will be looking forward to it a little later.
This would be really nice for a ladies luncheon, I bet!

Cherry Chicken Salad Croissants
2 1/2 C. cubed cooked chicken breast
2/3 C. dried cherries
1/3 C. chopped celery
1/3 C. chopped tart apple
1/3 C. chopped pecans toasted
1/2 C. mayonnaise
4 t. buttermilk
1/2 t. salt
1/8 t. pepper
7 croissants split
In a large bowl combine the chicken, cherries, celery, apple and pecans. In another bowl combine the mayonnaise, buttermilk, salt and pepper; add to chicken mixture and mix well. Spoon 1/2 C. chicken salad onto each croissant.
