    Hi..
    This is a great dish. We had it for dinner the other night and it was so good. I served it with a salad....makes a great quick meatless meal. This would also be very good to serve at a luncheon or to take to a potluck dinner.

    Cheese Spinach Pie

    Makes: 6 servings

    Ingredients:
    1 package (10 ounces) frozen, chopped spinach, thawed and squeezed dry
    1 carton (16 ounces) small-curd cottage cheese
    3 eggs
    4 tablespoons butter, melted
    1 cup sharp cheddar cheese cubes (1/2-inch pieces)
    3 tablespoons flour
    1 teaspoon salt (or to taste)

    Preparation:
    Preheat oven to 325 degrees.
    In large bowl, combine all ingredients and mix well. Turn into a buttered 10-inch pie plate. Bake in preheated oven 1 hour and 15 minutes or until set and edges are golden.
