Hi...
I have been making some old favorites this week and thought I would share the recipes with you....I may have posted them some other time, but thought I would post again for those that missed the recipe the first time!
I got this recipe from my neighbor, Judy (they have since moved but still in town). It is really good and you can make it earlier in the day and then just heat it up if you want to.
This time I used brown rice instead of regular white rice....

Chinese New Year's Rice
3 TBSP oil
1 lb. boneless chicken breasts, cut into bite-size pieces
3-1/2 cups chilled, cooked rice
3 green onions, sliced
1 stalk celery, sliced
1 carrot, shredded
1 to 2 TBSP soy sauce
pepper, to taste
Heat oil in large skillet over medium heat; add chicken. Cook and stir until lightly browned. Add remaining ingredients. Cook and stir until heated through.
Serves: 6
