Oh my... we just got done eating this for dinner tonight! YUM!!----I used sweet potatoes instead of regular white potatoes and it was so good....Looked a little weird, but so yummy!! I also didn't pare the skin off the potatoes because it didn't say to....besides the best vitamins, etc. are in the skin.

MUSTARD PORK CHOPS WITH SMASHED POTATOES AND PEAS
Makes 4 servings.
2 TBSP Dijon mustard
4 pork chops
2 green onions, thinly sliced
Salt and Pepper
3/4 cup white wine or use broth
3 TBSP olive or vegetable oil
10 oz pkg. frozen peas
1 pound potatoes, cut into pieces
Place potatoes in a saucepan with enough water to cover and bring to a boil. Add 1/2 tsp salt, reduce heat and simmer until tender, adding peas during last 2 min. of cooking. Drain and smash with green onions, 2 tbs oil, and 1/4 tsp each salt and pepper.
-Heat remaining oil in a skillet. Season pork with 1/2 tsp each salt and pepper and cook until golden brown and cooked through, transfer to plates. Add wine to skillet and simmer 1 min. Stir in mustard and spoon over pork. SERVE with smashed potatoes and peas...
