Hi all....
This is another wonderful recipe..The chicken was so juicy and tender. You could cut it with just a fork! This is another "keeper"!!

6 boneless, skinless chicken breast halves
2 eggs
1 to 2 cups seasoned bread crumbs
1/4 to 1/2 cup butter
8 ounces mushrooms, thinly sliced
8 ounces muenster cheese, sliced
1 1/2 cups chicken broth
16 ounces pasta of choice, cooked
Preheat oven to 350F.
Whisk eggs and place in shallow bowl. Place 1 cup bread crumbs into a
separate shallow bowl. Dip each chicken piece into whisked eggs and
transfer to bowl with crumbs. Turn to cover evenly, adding more bread
crumbs if needed.
Melt 1/4 cup butter in large skillet on stovetop. Add breaded chicken
pieces and brown on both sides on medium/high heat, adding more
butter if needed.
Transfer chicken to 9x13 inch baking dish. Sprinkle half of the
mushrooms over chicken. Cover with cheese slices, then sprinkle with
remaining mushrooms. Pour chicken broth over all and bake for 30 to
35 minutes or until chicken is no longer pink. Serve over pasta of
choice.
