    Watergate Cake with Cover-Up Icing

    June 17, 1976

    *Cake*
    1 (18 1/2-ounce) package white cake mix
    1 (3 1/2-ounce) package instant pistachio pudding mix
    3 eggs, unbeaten 3/4 cup oil
    1 cup lemon-lime carbonated beverage
    Cover-Up Icing
    3/4 cup shredded coconut
    1 cup finely chopped pecans

    Combine cake mix, pudding mix, eggs, oil and lemon-lime in a bowl. Beat
    until well-blended. Pour into a greased and floured 13X9-inch pan and
    bake at 350 degrees 45 minutes. Cool. Spread with Cover-Up Icing and
    sprinkle with coconut and pecans.

    *Cover-Up Icing*
    2 (1 1/2-ounce) envelopes nondairy whipped topping mix
    1 1/2 cups milk
    1 (3 1/2-ounce) package instant pistachio pudding mix

    Beat whipped topping mix, milk and pudding mix together until smooth and
    thick."

    I remember Watergate salad but never heard of the cake before.. I am going to make try this out. Thanks for the recipe!

    I never heard of either the cake of the salad. The cake sounds delicious. Must try it out. Might make a good dessert for New Years Day. Does anyone have the salad recipe?

    Found it online ...
    WATERGATE SALAD

    1 (20 oz.) can crushed pineapple and juice
    1 (3 oz.) box instant pistachio pudding mix
    1 (8 oz.) container Cool Whip
    1 c. miniature marshmallows
    1 c. chopped nuts

    Mix it all together and chill several hrs or over night..
    I make it for the green, for St Pattys' day.

    Watergate Salad

    1 hr 15 min
    servings
    total:
    8 servings, about 1/2 cup each


    what you need
    1can (20 oz.) crushed pineapple in juice, undrained
    1pkg. (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
    1cup JET-PUFFED Miniature Marshmallows
    1/2cup chopped PLANTERS Pecans
    1-1/2cups thawed COOL WHIP Whipped Topping
    make it

    COMBINE first 4 ingredients in large bowl.

    STIR in COOL WHIP.

    REFRIGERATE 1 hour.
