My hubby doesn't really like brussel sprouts, but I sneak them in every once and a while because he knows they are good for you!! He actually almost liked them!!

Sauteed Brussels Sprouts and Carrots
Total time: 15 minutes
Ingredients
1 lb. Brussel sprouts, stems trimmed
3 TBSP butter
5 oz. matchstick carrots
¼ tsp. salt
¼ tsp. pepper
Directions:
1. Cut Brussel sprouts into quarters. Preheat large saute pan on medium-high heat for 2-3 minutes.
2. Place sprouts, butter, and carrots in pan; cook and stir 2-3 minutes. Reduce heat to medium, cover and cook 6-7 more minutes, or until desired tenderness.
3. Season with salt and pepper, toss to coat with butter.
