Spicy Black Beans
Ingredients:
1 medium onion, chopped
2 red bell peppers, chopped (or a mixture of red, yellow and orange)
1 tablespoon vegetable oil
1 can black beans, drained and rinsed
1 teaspoon cumin
1 teaspoon Mexican oregano
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 cloves garlic
1/4 cup water
Juice of one lime
1 bunch of cilantro, chopped (optional)
Salt and pepper to taste
Method:
Heat oil in a large skillet. Add onion and saute over medium for about 4-6 minutes or until they are soft and translucent. Add the garlic, cook for 1 minute more. Add the spices and peppers. Cook for 5 minutes until peppers are tender. Add the beans and water and cook on low for 8 minutes. Just before serving add salt and pepper to taste and the lime juice and cilantro.

Turn leftover beans into a speedy and delicious breakfast! Combine 1/3 cup spicy black beans with one scrambled egg. Top with shredded cheese and wrap in warm flour tortilla for a killer breakfast burrito.
