    Pear and Arugula Salad with Easy Glazed Pecans

    Ingredients

    Glazed Pecans
    2.5 oz. pecan halves
    1 TBSP butter
    1 TBSP maple syrup
    ¼ tsp. cinnamon
    Pinch of kosher salt (optional)


    Salad
    2 cups arugula
    2 cups baby spinach
    ¼ cup  blue cheese, or Feta cheese crumbles
    1 large, ripe pear, sliced into bite sized pieces
    2-4 TBSP prepared poppy seed dressing (adjust amount to taste)

    Instructions
    1. Preheat oven (or toaster oven) to 350. Line a baking sheet with parchment paper. 
    2. In a microwave-safe bowl or measuring cup, add butter, cinnamon, and maple syrup. Microwave on high heat for 1-2 minutes, until butter is melted and mixture is bubbly.
    3. Add the pecans to the butter and syrup mixture, and stir to coat well. Spread pecans in a single layer on the baking sheet, and sprinkle with a pinch of kosher salt, if desired. Bake in preheated oven for 5 minutes. (These nuts can burn very quickly, so do not over bake! As soon as they start looking darker brown, take them out.)
    4. While nuts are cooling (5-10 minutes), gently toss the arugula, spinach, pear, cheese and salad dressing together. Sprinkle glazed nuts over salad and serve.
