    I made the baked oatmeal for my hubby...it was really wonderful! and it smelled divine as it was baking! I only made 1/2 of the recipe because it makes so much. We still had some leftover and it is good the next day...I only had a bit that was cold, but it almost tasted like an oatmeal spice sweet bread....yummy!! and so much good stuff in it too!

    Baked Oatmeal

    3 c oatmeal (quick)
    1/2 c brown sugar
    2 eggs
    2 c milk
    1/2 c oil
    1/4 t salt
    1 t vanilla
    1 t cinnamon
    1/4 t nutmeg
    1 t baking powder
    1/2 c raisins
    1/2 c walnuts
    1/2 c diced apples

    Preheat oven to 350. In a large bowl, combine quick oats, brown sugar, eggs, milk, salt, oil, vanilla, cinnamon, nutmeg, and baking powder. Mix well, and add raisins, nuts and apples. Pour into a well greased, 1 qt baking dish and bake for 45 minutes.
