    I tried this recipe for my diabetic friends...they are very good!

    Orange Cranberry Cookies (Diabetic)
    Number of Servings: 24
    Serving size: 1 cookie
    1/4 cup stick butter or margarine
    1 egg
    3 TBSP orange juice concentrate, thawed
    3/4 cup all-purpose flour
    1/4 cup quick-cooking or old-fashioned oats, uncooked
    1/3 cup EQUAL Spoonful OR 8 packets Equal sweetener
    1/4 tsp. baking soda
    1/8 tsp. cream of tartar
    1 dash salt
    1 tsp. orange peel, grated
    1/2 cup dried cranberries
    1/2 cup chopped nuts (walnuts or pecans)
    1. Beat butter in medium bowl. Beat in egg and orange juice.
    2. Mix combined flour, oats, EQUAL, baking soda, cream of tartar, salt and orange peel into the creamed mixture until well blended. Stir in dried cranberries and chopped nuts.
    3. Drop by teaspoons onto ungreased (or parchment paper lined) baking sheets. Bake in preheated 375 oven for 8 to 10 minutes or until bottoms are lightly browned. Remove from baking sheet and cool completely on wire rack.
    Makes 2 dozen cookies.
    4. Store in airtight container at room temperature.
