Quick Chili and Rice
2 lb. ground beef
1 large onion, chopped
3 TBSP. chili powder
3 cups V8 Vegetable Juice
2 cans (16-oz. each) pork & beans
6 cups hot cooked rice
Cook beef, onion and chili powder in large saucepan until beef is browned. Pour off fat. Add vegetable juice and beans. Heat to a boil. Cook over low heat for 10 minutes, stirring occasionally. Serve over rice.
