Diabetic Orange Cookies
1 medium orange
1/2 cup shortening (I used margarine)
2 TBSP granulated sugar replacement (I used "Sweet 'n Low")
1 egg
2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup buttermilk
Grate the rind of the orange and also squeeze the juice from the orange. Cream together the shortening and sugar replacement. Add egg, orange juice, grated orange rind, beating until light and fluffy. combine the flour, baking powder, baking soda and salt in a sifter, and add alternately with buttermilk to the creamed mixture, stir to blend. Drop by teaspoonfuls onto lightly sprayed ( or parchment paper lined) baking sheets, 2-3 inches apart.
Bake at 375 for 10-12 minutes.
