Irish Lace Cookies 1/2 cup butter or margarine, softened 1 cup light brown sugar 4 TBSP all-purpose flour 2 TBSP milk 1 tsp. vanilla 1 cup old-fashioned rolled oats (not quick cooking)...but I used quick cooking because that is what I had....seemed ok to me.
Preheat oven to 350. Cream butter and brown sugar until light and fluffy. Stir in the flour, milk, and vanilla. Stir in oats. Drop the batter by teaspoonfuls onto ungreased (or parchment lined) cookie sheets, about 3 inches apart (these cookies spread out a lot). Bake 10 to 12 minutes until golden. Let them cool slightly on sheets then remove to wire racks to cool completely.
