Corn-Avocado Salsa 4 cup fresh or frozen corn Kernels 1tbsp fajita seasoning 1/2 tsp pepper 2 tbsp vegetable oil 1 red bell pepper chopped 1/2 jalapeno pepper seeded & chopped 1/2 cup chopped green onions 1/4 cup fresh chopped cilantro 1/4 cup fresh lime juice 2 tbsp orange juice 3/4 tsp salt 2 ripe avocados, diced 1. Saute first 3 ingredients in hot oil on medium heat X 6-8 min. Remove from heat & let cool. 2. Stir together corn mixture, bell pepper, and next 6 ingredients. Cover & chill at least 30 min. Stir in avocados just before serving. Makes 4 1/2 cups. |
