Fruit & Cheese Spread
This is oh, so easy to make, is delicious, and you can even freeze it so you have a snack all ready to serve for yourself or company, or take as a hostess present if going to a gathering!
2 8 oz. bars cream cheese (room temperature or softened a little in the microwave)
1 16 oz. can fruit cocktail
1 20 oz. can crushed pineapple (or 2 8 oz. cans)
1 small pkg. instant vanilla pudding
Drain fruit cocktail, add all ingredients to cream cheese, and beat with an electric mixer until fruit gets mashed up. If you want to form it into a cheese ball, also drain the pineapple juice. (I prefer mine as a spread.)
Top with chopped peanuts, if desired, or, if making a cheese ball, roll in chopped peanuts.
Serve with crackers: I use Triscuits, Wheat Thins, and Ritz.
Freeze leftovers or make a double batch with the purpose of freezing some for another time.
