    Everybody likes this; it is well worth the extra time because it makes so much. It is great to take anywhere there is a crowd or to have on hand if you are having company for several days because it keeps so well.
    1 cup sugar
    2 tbsp.flour
    1/2 tsp salt
    13/4 cup pineapple juice
    2 eggs beaten
    1tbsp cooking oil
    1pkg(160z.) Acine de Pepe pasta
    2 tsp. salt
    3(11 0z.) cans mandarin oranges
    2 (20 oz.) cans pineapple chunks
    1 (20 oz. ) can crushed pineapple
    1 ( 9 0z. ) carton cool whip
    1 cup miniature marshmellows
    1 cup coconut

    Drain pineapple, reserving juice. Combine sugar, flour and 1/2 tsp. salt. Gradually stir in pineapple juice and beaten eggs.
    cook over moderate heat , stirring until thickened; stir in lemon juice. Cool . Bring water ,2 tsp salt and oil to boil; add Acine de Pepe. Cook at rolling boil 5-8 minutes
    or till done. Drain. Rinse, drain and cool. Combine egg mixture with pasta. Mix lightly. Cool and then stir in pineapple. Refrigerate overnight in an airtight container.
    The next morning add cool whip and drained mandarin oranges marshmellows and coconut. Mix lightly and chill.
    Frog-Eye will last a week in an airtight container. This will serve 25.
