    Hi...
    I made this for dinner a few nights ago and it was soooooooooo good! A little different twist using the sweet potatoes...and you don't have to spend hours cutting up veggies..just the sweet potatoes and the green peppers! I will definitely be making this one again sometime!

    PORK & SWEET POTATO STIR FRY


    1/2 cup beef broth
    2 tbs reduced sodium soy sauce
    1 tbs ketchup
    1 tbs rice vinegar
    2 tsp cornstarch
    1/4 tsp red pepper flakes
    2 tbs olive oil (I used vegetable oil)
    1 pound thin boneless pork chops, cut across grain, 1/4" thick
    1/8 tsp salt
    1 1/2 pounds sweet potatoes, peeled, quartered lengthwise and sliced crosswise into 1/4" thick
    2 green bell peppers, cored, seeded and cut into 1/2" thick strips

    1. In bowl, mix first 6 ingredients until smooth. Set aside.
    2. Heat 1 tbs oil in a skillet. Add pork and stir fry 2 min. Season with salt. Remove to plate and keep warm.
    3. Add remaining oil to skillet, saute sweet potatoes and peppers 8 min. Add 1 cup water and simmer covered until sweet potatoes are tender.
    4. Stir in broth mixture and cooked pork and bring to a boil. Reduce heat and simmer 1 min. or until sauce is thickened and meat is heated through. Serve immediately. I served this with Beef Rice a Roni. Very good meal. MAKES 4 SERVINGS.*
