    Hi...
I made this for dinner last night and it was very good and tasty! ...a nice quick and easy meal. Just add a salad or maybe some fresh fruit.
Note---I found that the potatoes took longer to cook than stated in the recipe...might just be my old microwave! Just microwave until the potatoes are just about done.
    Enjoy!

    Potatoes & Kielbasa Skillet

1 lb red potatoes, cubed with skin on
    2 T water
1 lb smoked Polish sausage, cut into ½ inch slices
    ½ C chopped onion
    1 T olive oil
    2 T brown sugar
    2 T cider vinegar
    2 T Dijon mustard
    ½ t dried thyme
    ¼ t pepper
    4 C baby spinach
5 bacon strips, cooked and crumbled

Place potatoes and water in a microwave safe dish. Cover and microwave on high for 4 minutes until tender; drain.
In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes, saute 3-5 minutes longer or until sausage and potatoes are lightly browned.
Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted.
    4 servings
